For us, it is great to prepare healthy and tasty food, to pair it with a good wine, to respect and delight the guest, to tell stories about family and the place that is home to us.

With this attitude we create, every day, the signature dishes of the Abruzzo tradition. To do so, we use local ingredients, excellent local products, and seasonal vegetables and fruits. The flavors chosen by the kitchen of Hotel Iris are those with which we were raised by our parents and even before that, our grandparents. They are the evolution of the flavors of our ancestors: shepherds, breeders, farmers, mountain people.
The breakfast
To venture into our magical land and practice sports you need a boost of energy: Hotel Iris always offers you a hearty breakfast, healthy and flavorful. Local products, home made pastries, croissants, cakes, tarts, dishes accompanied by milk, coffee, tea, barley coffee, ginseng coffee, fruit juices.
Plus honey, jams, yogurt and juices. There is also a savory corner, with cold cuts and cheeses to fill up your sandwich with fresh bread.
If you wish to set off early for your excursions, it is possible to have an early breakfast, so you will have plenty of time to get ready.

The local products at breakfast
The jams we use are jams from Abruzzo produced by the d'Alessandro confetture commercial farm: delicious and healthy jams made with fruit of the highest quality.
The honey you'll find is millefiori, including Santoreggia honey, created from the blooming that occurs within the Abruzzo, Lazio and Molise National Park. This is a liquid yellow-green honey, protected by the slow food presidium. A special honey that can only be found in our places.

Traditional dishes and ingredients linked to the territory
Here you will find some traditional dishes, such as the "patate maritate di Pescasseroli," a dish made by using the Fucino PGI potato. This potato can be yellow, white or red.
The special features of the soil where the potato is grown and the agronomic techniques used by the growers of Fucino potatoes, in line with European regulations on traceability and sustainability, are the keys to obtaining a high-quality product with unique and distinctive characteristics.
Lentils from the Duilio Antonucci Commercial Farm, a product with unique features, are also produced in Pescasseroli. The smaller size and shorter cooking time preserve the characteristics of this legume and emphasize its flavor.

We also use the Flour of Solina to make our pasta and homemade cakes for breakfast. This type of flour is low in gluten and high in protein. The scent is typical of the mountains. The cookies made with Solina flour, which have butter, raisins and milk are very good.
Saffron is also a local product. "Zafferano dell'Aquila P.D.O." has a strong and excellent flavor. It is used in famous recipes such as the Saffron Risotto, but also in appetizers such as the "Rotolo del contadino," made with boiled spinach, ricotta and saffron.
Then there are the local cheeses, with their strong and enveloping aroma, such as the Pecorino di Picinisco, available in two types, Scamosciato and Aged. All to taste is also the Gregoriano di Scanno, a cheese that has been the main food of shepherds for a very long time.
